*Cajun-Shrimp-Deviled-Eggs*





*Ingredients

°1 dozen eggs
°2 dozen medium sized fresh shrimp
°1 teaspoon of cooking oil
°1/2 small lemon
°2-3 tablespoons mayonnaise
°1/2-1 tbsp hot sauce depending on spice level
°1 tablespoon sweet relish
°1-2 tsp Old Bay seasoning + 2 tsp (for Cajun shrimp)
°1/4 teaspoon garlic powder
°2 tablespoons chopped fresh dill + 2 teaspoons (garnish)
°Salt + pepper to taste

*Instructions

Gently place the eggs in a shallow pan.
Fill with water covering the eggs and once the eggs begin to boil, turn off the heat and cover for 15-20 minutes.
Cajun egg filling
Peel the eggs, cut them in half and in a medium sized bowl, add the egg yolks. Place the halved egg whites on paper towels to dry.
In the bowl with the egg yolks, add the listed ingredients, starting with mayonnaise. Taste after adding each ingredient, adjust to taste and spice level.
Blend until creamy, cover and set aside.
cajun shrimp
In a medium saucepan over medium/high heat, add the olive oil. Pat the shrimp dry with a paper towel. Add Ole Bay, toss until well coated.
Sauté shrimp until cooked through (if raw) or until lightly charred. Halfway through cooking, add about 1 tbsp. shrimp lemon juice.
Cajun Shrimp Deviled Egg Platter
Spoon egg mixture evenly into egg white cups and top with Cajun shrimp.
Garnished with paprika & dill.
